Vegan root veggie soup


Ingredients

  • 300gm root parsley

  • 100gm carrots

  • 1 medium sweet potato

  • 1 medium onion

  • 1 tbsp coconut oil

  • 2 tbsp vegan creme fraiche

  • Dry mint

  • Salt

Directions

Chop the onion. Roast in coconut oil. Dice the root parsley, carrots and the sweet potato and add to the onions. Slightly roast. Add 1 Lt boiling water and let simmer. When veggies soften, add vegan creme fraiche and mix well with a hand blender. Season with salt and dry mint.
